When Aldo Vajra was 15, he ran away from home to join the Sessantotto, the 1968 movement of student-led occupation and the labor strikes at the University of Turin. When his parents found him, he was sent to his grandparents’ farm in Barolo - and there he began farming. 3 years later the family’s Bricco delle Viole cru, dating from 1931, was awarded one of the earliest organic certifications in Barolo. Today Aldo runs the winery with Milena and their 3 children; nurturing the flora and fauna in the vineyard and beyond, they are proud of the high level of manual work per hectare.

Because of its high elevation, Bricco delle Viole has a relatively late harvest date. The grapes are hand sorted 3 times: on the vine, as clusters on the sorting table, and as berries after destemming. Traditional vinification is in tall open top tanks, with a long period under submerged cap.

For the evening, we will be pouring the following wines by the 3-ounce taste:

2021 Bricco delle Viole

Picked between 10/13 & 10/19. After sorting, vinification was 51 days, 24 months aging in cask. Aromas of violet and crushed flowers, dark fruit, incense and balsamic, black currant and eucalyptus. There is a persistent fruit- mineral core.

2020 Bricco delle Viole

Vintage 2020 was one of the longest of the decade and harvested over 3 days, Oct 7, 10, 13. Vinification was 57 days, aged 28 months in Slavonian cask. Violet, rose petals, kirsch, blood orange, cherry, minerality.

2016 Brico delle Viole

A beautiful classic vintage, harvested late Sept into late Oct. Aged 32 months in Slovenian casks, racking per cask. Red and dark berries, sour cherry, lavender, graphite, rose bud, pine.

Alongside the wines, Chef Rodrigo and Chef Tom will prepare a number of special dishes inspired by the cuisine and ingredients of the region.
